Instructions
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, cumin, coriander, cinnamon, turmeric, and cayenne pepper. Stir for 1 minute until fragrant.
- Stir in the carrots, parsnips, and sweet potato. Cook for 5 minutes, stirring occasionally.
- Add the lentils, diced tomatoes, and vegetable broth. Bring to a boil, then reduce the heat to low and cover the pot.
- Simmer for 30-35 minutes, or until the lentils and vegetables are tender. Stir occasionally and add more broth if needed.
