Ingredients

  • 1 block (14 oz) firm tofu, drained and cubed
  • 1 medium cauliflower, cut into florets
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1 can (14 oz) coconut milk
  • 1 cup vegetable broth
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • Cooked rice, for serving

Instructions

  1. Prepare the tofu by pressing it to remove excess moisture. Cut into cubes.
  2. Heat 1 tablespoon of vegetable oil in a large pan over medium heat. Add the tofu cubes and cook until golden brown on all sides. Remove and set aside.
  3. Add the remaining tablespoon of oil to the pan. Sauté the onion until translucent.
  4. Stir in the garlic and ginger, cooking for another minute until fragrant.
  5. Mix in the curry powder and cumin, stirring to coat the onions and release the spices’ aroma.
  6. Pour in the coconut milk and vegetable broth. Bring to a simmer.
  7. Add the cauliflower florets to the pan. Cover and cook for about 10 minutes, or until the cauliflower is tender.
  8. Return the tofu to the pan, stirring gently to combine. Season with salt and pepper to taste.
  9. Simmer for an additional 5 minutes to allow the flavors to meld.
  10. Garnish with fresh cilantro and serve hot over cooked rice.

Additional Notes

For a spicier curry, add a pinch of cayenne pepper or a chopped chili. You can substitute broccoli for cauliflower if desired. For a richer flavor, use full-fat coconut milk.
