Ingredients
- 2 medium sweet potatoes, peeled and cubed
- 1 cup sweetcorn kernels (fresh, frozen, or canned)
- 1 small red onion, finely chopped
- 2 cloves garlic, minced
- 1 cup breadcrumbs
- 1 tablespoon ground flaxseed mixed with 3 tablespoons water (flax egg)
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 400°F (200°C).
- Boil the sweet potatoes in a pot of salted water until tender, about 10-15 minutes. Drain and mash them in a large bowl.
- Add the sweetcorn, red onion, garlic, breadcrumbs, flax egg, cumin, smoked paprika, salt, and pepper to the mashed sweet potatoes. Mix well until combined.
- Shape the mixture into 6 equal-sized patties.
- Heat the olive oil in a large skillet over medium heat. Cook the patties for 3-4 minutes on each side until golden brown.
- Transfer the patties to a baking sheet and bake in the preheated oven for 10 minutes to ensure they are cooked through.
- Serve the burgers warm, with your choice of buns and toppings.
Additional Notes
For a gluten-free version, use gluten-free breadcrumbs. You can also add a pinch of chili powder for extra heat or some chopped fresh herbs like cilantro for added freshness.
