Ingredients
- 1 head of garlic
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 4 cups vegetable broth
- 4 cups frozen peas
- Salt and pepper to taste

Instructions
- Preheat your oven to 400°F (200°C).
- Prepare the garlic by cutting off the top of the head to expose the cloves. Drizzle with olive oil, wrap in foil, and roast for 30 minutes until soft.
- Sauté the onion in a large pot over medium heat until translucent, about 5 minutes.

- Squeeze the roasted garlic cloves into the pot, discarding the skins.
- Blend the soup using an immersion blender until smooth. Season with salt and pepper.
