Ingredients
- 2 large aubergines, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon smoked paprika
- 1/2 teaspoon cinnamon
- 1 can (400g) chopped tomatoes
- 1 cup vegetable stock
- 200g cooked chestnuts, roughly chopped
- Salt and pepper to taste
- 1 cup couscous
- 1 1/4 cups boiling water
- Fresh coriander, for garnish
Instructions
- Prepare the aubergines by cutting them into 1-inch cubes. Set aside.
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, cumin, coriander, smoked paprika, and cinnamon. Stir for 1 minute until fragrant.
- Add the aubergine cubes to the pot and stir to coat them with the spices. Cook for 5 minutes, stirring occasionally.
- Pour in the chopped tomatoes and vegetable stock. Bring to a simmer, cover, and cook for 20 minutes, or until the aubergines are tender.
- Stir in the chopped chestnuts and season with salt and pepper. Cook for an additional 5 minutes.
- Prepare the couscous by placing it in a heatproof bowl. Pour over the boiling water, cover, and let it sit for 5 minutes. Fluff with a fork.
- Serve the tagine over the couscous, garnished with fresh coriander.
Additional Notes
For a spicier version, add a pinch of chili flakes. You can substitute chestnuts with chickpeas for a different texture. This dish pairs well with a side of yogurt or a fresh salad.
