Ingredients
- 1 block (14 oz) firm tofu, drained and pressed
- 2 tablespoons cornstarch
- 2 tablespoons vegetable oil
- 4 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1/4 cup chopped green onions
- 1/4 cup chopped cilantro
- 1/4 cup peanuts, chopped
- 1/4 cup mayonnaise
- 2 tablespoons sriracha sauce
- 1 tablespoon honey
- 1 tablespoon rice vinegar
- Salt and pepper to taste
Instructions
- Prepare the tofu by cutting it into 1-inch cubes. Toss the cubes in cornstarch until evenly coated.
- Heat the vegetable oil in a large skillet over medium-high heat. Add the tofu cubes and cook until golden and crispy on all sides, about 10-12 minutes. Remove from heat and set aside.
- Mix the mayonnaise, sriracha sauce, honey, and rice vinegar in a small bowl to make the dressing. Adjust seasoning with salt and pepper to taste.
- Combine the salad greens, cherry tomatoes, cucumber, green onions, and cilantro in a large bowl.
- Add the crispy tofu to the salad and drizzle with the prepared dressing. Toss gently to combine.
- Garnish with chopped peanuts before serving.
Additional Notes
For a vegan version, substitute the mayonnaise with vegan mayo and honey with agave syrup. You can also add other vegetables like bell peppers or shredded carrots for extra crunch.
