- 1 tablespoon curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/4 teaspoon cayenne pepper (optional)
- 1 can (14 oz) diced tomatoes
- 1 can (14 oz) coconut milk
- 1 medium cauliflower, cut into florets
- 1 can (14 oz) chickpeas, drained and rinsed
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
- Cooked rice or naan, for serving
Instructions
- Heat the olive oil in a large pot over medium heat. Add the onion and sauté until translucent, about 5 minutes.
- Add the garlic and ginger, and cook for another 2 minutes until fragrant.
- Stir in the curry powder, cumin, coriander, turmeric, and cayenne pepper. Cook for 1 minute to toast the spices.
- Pour in the diced tomatoes and coconut milk, stirring to combine.
- Add the cauliflower florets and chickpeas to the pot. Season with salt and pepper.
- Bring the mixture to a simmer, cover, and cook for 20 minutes, or until the cauliflower is tender.
- Adjust seasoning with more salt and pepper if needed.
- Garnish with fresh cilantro before serving.
- Serve hot with cooked rice or naan.
Additional Notes
For a spicier curry, increase the amount of cayenne pepper. You can also add other vegetables like spinach or peas for extra nutrition. If you prefer a thicker curry, simmer uncovered for the last 5 minutes to reduce the sauce.
