- 1 teaspoon red chili powder

- 1/2 cup yogurt, whisked
- Fresh coriander leaves for garnish
Instructions
- Prepare the potatoes by boiling them in salted water until just tender. Drain and set aside.
- Heat the vegetable oil in a large pan over medium heat. Add the cumin seeds and let them sizzle for a few seconds.
- Add the chopped onion and sauté until golden brown.
- Stir in the ginger-garlic paste and cook for another minute.
- Pour in the tomato puree, turmeric powder, red chili powder, and salt. Cook until the oil separates from the masala.
- Add the boiled potatoes to the pan, stirring to coat them in the masala.
- Mix in the sugar and garam masala, then reduce the heat to low.
- Fold in the whisked yogurt, ensuring it is well incorporated.
- Cover the pan and let the potatoes simmer on low heat for about 15 minutes, allowing the flavors to meld.
- Garnish with fresh coriander leaves before serving.
Additional Notes
For a creamier texture, you can add a splash of cream before serving. If you prefer a milder dish, reduce the amount of red chili powder. This dish pairs well with naan or steamed rice.
