Ingredients
- 300g spaghetti
- 200g broccoli florets
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 red chilli, finely sliced
- Zest and juice of 1 lemon
- Salt and pepper, to taste
- Grated Parmesan cheese, to serve (optional)
Instructions
- Boil a large pot of salted water and cook the spaghetti according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti.
- Steam the broccoli florets in a steamer basket over boiling water for about 5 minutes, or until tender. Set aside.
- Heat the olive oil in a large pan over medium heat. Add the minced garlic and sliced chilli, sautéing for 1-2 minutes until fragrant.
- Add the cooked spaghetti and broccoli to the pan. Toss to combine with the garlic and chilli.
- Pour in the lemon juice and zest, and season with salt and pepper. If the pasta seems dry, add a little reserved pasta water to loosen it.
- Serve immediately, topped with grated Parmesan cheese if desired.
Additional Notes
For a vegan version, omit the Parmesan cheese or use a plant-based alternative. You can also add a handful of toasted pine nuts for extra texture and flavor.
