Ingredients

  • 300g spaghetti
  • 200g broccoli florets
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 red chilli, finely sliced
  • Zest and juice of 1 lemon
  • Salt and pepper, to taste
  • Grated Parmesan cheese, to serve (optional)

Instructions

  1. Boil a large pot of salted water and cook the spaghetti according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti.
  2. Steam the broccoli florets in a steamer basket over boiling water for about 5 minutes, or until tender. Set aside.
  3. Heat the olive oil in a large pan over medium heat. Add the minced garlic and sliced chilli, sautéing for 1-2 minutes until fragrant.
  4. Add the cooked spaghetti and broccoli to the pan. Toss to combine with the garlic and chilli.
  5. Pour in the lemon juice and zest, and season with salt and pepper. If the pasta seems dry, add a little reserved pasta water to loosen it.
  6. Serve immediately, topped with grated Parmesan cheese if desired.

Additional Notes

For a vegan version, omit the Parmesan cheese or use a plant-based alternative. You can also add a handful of toasted pine nuts for extra texture and flavor.
