Ingredients

  • 1 cup vegetable oil
  • 1/4 cup dried red chilli flakes
  • 2 tablespoons Sichuan peppercorns
  • 1/4 cup fried shallots
  • 1/4 cup fried garlic
  • 1 tablespoon soy sauce
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 cinnamon stick
  • 2 star anise
  • 3 bay leaves

Instructions

  1. Prepare a heatproof bowl by placing the chilli flakes, Sichuan peppercorns, fried shallots, and fried garlic in it.
  2. Heat the vegetable oil in a saucepan over medium heat. Add the cinnamon stick, star anise, and bay leaves.
  3. Simmer the oil with the spices for about 10 minutes, allowing the flavors to infuse.
  4. Remove the saucepan from heat and let it cool for 5 minutes.
  5. Pour the warm oil through a strainer over the prepared bowl with chilli flakes and other ingredients. Discard the whole spices.
  6. Stir in the soy sauce, sugar, and salt until well combined.
  7. Cool the chilli oil completely before transferring it to a clean jar for storage.

Additional Notes

For a milder version, reduce the amount of chilli flakes. You can also add sesame seeds for extra flavor. Store the chilli oil in a sealed jar in the refrigerator for up to a month.
