Ingredients
- 200g dried rice noodles
- 250g fresh mushrooms (shiitake or button), sliced
- 2 tablespoons vegetable oil
- 1 red bell pepper, thinly sliced
- 1 cucumber, julienned
- 2 spring onions, chopped
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 1 teaspoon chili paste (adjust to taste)
- 1 teaspoon sugar
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Prepare the rice noodles according to the package instructions. Drain and set aside.
- Heat the vegetable oil in a large pan over medium-high heat. Add the sliced mushrooms and sauté until they are golden and crispy, about 5-7 minutes. Remove from heat and set aside.
- Combine the soy sauce, rice vinegar, sesame oil, chili paste, and sugar in a small bowl. Stir until the sugar is dissolved.
- Toss the cooked noodles, crispy mushrooms, red bell pepper, cucumber, and spring onions in a large bowl.
- Pour the dressing over the noodle mixture and toss until everything is well coated. Season with salt and pepper to taste.
- Garnish with fresh cilantro before serving.
