- 500g Jersey Royal potatoes, scrubbed and halved
- 250g wild mushrooms, cleaned and sliced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 tablespoon fresh thyme leaves
- Salt and pepper to taste
- 2 tablespoons unsalted butter
- 1 tablespoon chopped fresh parsley, for garnish
Instructions
- Prepare the potatoes by placing them in a pot of salted water. Bring to a boil and cook for 10-12 minutes until tender. Drain and set aside.
- Heat the olive oil in a large skillet over medium heat. Add the garlic and sauté for 1 minute until fragrant.
