Ingredients
- 1 cup basmati rice
- 2 cups water
- 1 tablespoon olive oil
- 1 teaspoon mustard seeds
- 1/4 teaspoon turmeric powder
- 1/4 cup fresh lemon juice (about 2 lemons)
- Salt to taste
- 2 tablespoons chopped fresh cilantro
- 1/4 cup roasted peanuts (optional)
Instructions
- Rinse the basmati rice under cold water until the water runs clear. This helps remove excess starch.

- Fluff the rice with a fork and set aside.
- Heat the olive oil in a large pan over medium heat. Add the mustard seeds and let them splutter for a few seconds.
- Add the turmeric powder and stir for a few seconds until fragrant.
- Pour in the lemon juice and add salt to taste. Stir well.
- Combine the cooked rice with the lemon mixture in the pan. Mix gently to ensure the rice is evenly coated.
- Garnish with chopped cilantro and roasted peanuts, if using.
- Serve warm as a side dish or a light main course.
Additional Notes
For a spicier version, add a chopped green chili along with the mustard seeds. You can also substitute olive oil with ghee for a richer flavor.
