Ingredients

  • 2 large red bell peppers
  • 2 large tomatoes

  • 1 teaspoon ground cumin
  • Fresh parsley for garnish

Instructions

  1. Preheat your grill or oven to 400°F (200°C).
  2. Roast the red bell peppers, tomatoes, and onion on the grill or in the oven for about 20-25 minutes, turning occasionally, until the skins are charred and the vegetables are soft.
  3. Remove the vegetables from the heat and let them cool slightly.
  4. Peel the skins off the peppers and tomatoes, then chop them into small pieces.
  5. Chop the onion and mince the garlic.
