Ingredients
- 2 large red bell peppers
- 2 large tomatoes
- 1 medium onion
- 2 cloves garlic

- 1 teaspoon ground cumin
- Fresh parsley for garnish
Instructions
- Preheat your grill or oven to 400°F (200°C).
- Roast the red bell peppers, tomatoes, and onion on the grill or in the oven for about 20-25 minutes, turning occasionally, until the skins are charred and the vegetables are soft.
- Remove the vegetables from the heat and let them cool slightly.
- Peel the skins off the peppers and tomatoes, then chop them into small pieces.
- Chop the onion and mince the garlic.
- Combine the chopped vegetables and garlic in a large bowl.
- Whisk together the olive oil, lemon juice, salt, pepper, and cumin in a small bowl.
- Pour the dressing over the vegetable mixture and toss to combine.
- Garnish with fresh parsley before serving.
Additional Notes
For a spicier version, add a chopped chili pepper to the salad. You can also substitute lemon juice with lime juice for a different citrus flavor. This salad can be made a day ahead and stored in the refrigerator to allow the flavors to meld.
