Ingredients

  • 1 head of garlic
  • 1 tablespoon olive oil
  • 1 medium onion, chopped

  • Salt and pepper to taste
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).

  3. Sauté the onion in a large pot over medium heat until translucent, about 5 minutes.
  4. Add the vegetable broth and bring to a boil.
  5. Stir in the peas and cook for 5 minutes until tender.
  6. Squeeze the roasted garlic cloves into the pot, discarding the skins.
  7. Blend the soup using an immersion blender until smooth. Season with salt and pepper.
  8. Serve hot, garnished with fresh mint leaves if desired.

Additional Notes

For a creamier texture, you can add a splash of coconut milk or cream. If you prefer a chunkier soup, blend only half of the mixture. This soup pairs well with crusty bread or a light salad.
