- 2 cups dried pinto beans, rinsed
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 6 cups water
- 2 tablespoons vegetable oil
- 1/4 cup chopped fresh cilantro (optional)
Instructions
- Prepare the pressure cooker by adding the rinsed pinto beans, chopped onion, minced garlic, ground cumin, chili powder, salt, black pepper, and water.
- Seal the pressure cooker and set it to high pressure for 45 minutes.
- Release the pressure naturally for about 10 minutes, then carefully perform a quick release to remove any remaining pressure.
- Drain the beans, reserving about 1 cup of the cooking liquid.
- Heat the vegetable oil in a large skillet over medium heat.
- Add the drained beans to the skillet and mash them with a potato masher or the back of a spoon, adding reserved cooking liquid as needed to reach your desired consistency.
- Stir in the chopped cilantro, if using, and adjust seasoning to taste.
