Ingredients

  • 250g granulated sugar
  • 750ml gin

Instructions

  1. Prepare the rhubarb by washing and chopping it into small pieces.
  2. Combine the chopped rhubarb and sugar in a large, sterilized jar. Stir to coat the rhubarb evenly with sugar.
  3. Add the gin to the jar, ensuring the rhubarb is fully submerged. If using, add the split vanilla pod.
  4. Seal the jar tightly and shake gently to mix the ingredients.
  5. Store the jar in a cool, dark place for 1 week, shaking it gently every day to help the sugar dissolve and flavors infuse.
  6. Strain the gin through a fine mesh sieve or cheesecloth into a clean bottle, discarding the rhubarb solids.

Additional Notes
