Ingredients
- 500g fresh rhubarb, chopped
- 250g granulated sugar
- 750ml gin
- 1 vanilla pod, split (optional)
Instructions
- Prepare the rhubarb by washing and chopping it into small pieces.
- Combine the chopped rhubarb and sugar in a large, sterilized jar. Stir to coat the rhubarb evenly with sugar.
- Add the gin to the jar, ensuring the rhubarb is fully submerged. If using, add the split vanilla pod.
- Seal the jar tightly and shake gently to mix the ingredients.
- Store the jar in a cool, dark place for 1 week, shaking it gently every day to help the sugar dissolve and flavors infuse.
- Strain the gin through a fine mesh sieve or cheesecloth into a clean bottle, discarding the rhubarb solids.
- Enjoy your rhubarb gin neat, over ice, or as a base for cocktails.
Additional Notes
For a sweeter gin, increase the sugar to 300g. You can also experiment with additional flavors like ginger or citrus peel for a unique twist. Store the rhubarb gin in a cool, dark place, and it will keep for several months.
