  • 4 medium-sized beetroots, peeled and cut into wedges
  • 1 whole garlic bulb

  • Salt and pepper to taste
  • 1 tablespoon balsamic vinegar (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the garlic by cutting off the top of the bulb to expose the cloves. Drizzle with a little olive oil and wrap it in aluminum foil.
  3. Place the beetroot wedges on a baking sheet. Drizzle with olive oil, sprinkle with thyme, salt, and pepper. Toss to coat evenly.
  4. Add the wrapped garlic bulb to the baking sheet with the beetroot.
  5. Roast in the oven for 45 minutes, or until the beetroot is tender and the garlic is soft.
  6. Remove from the oven and let cool slightly. Squeeze the roasted garlic cloves out of their skins and mix them with the beetroot.
  7. Drizzle with balsamic vinegar before serving, if desired.
