Ingredients
- 4 medium-sized beetroots, peeled and cut into wedges
- 1 whole garlic bulb
- 2 tablespoons olive oil
- 1 teaspoon fresh thyme leaves
- Salt and pepper to taste
- 1 tablespoon balsamic vinegar (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Prepare the garlic by cutting off the top of the bulb to expose the cloves. Drizzle with a little olive oil and wrap it in aluminum foil.
- Place the beetroot wedges on a baking sheet. Drizzle with olive oil, sprinkle with thyme, salt, and pepper. Toss to coat evenly.
- Add the wrapped garlic bulb to the baking sheet with the beetroot.
- Roast in the oven for 45 minutes, or until the beetroot is tender and the garlic is soft.
- Remove from the oven and let cool slightly. Squeeze the roasted garlic cloves out of their skins and mix them with the beetroot.
- Drizzle with balsamic vinegar before serving, if desired.
Additional Notes
For a variation, try adding a sprinkle of feta cheese or goat cheese on top before serving. You can also substitute thyme with rosemary for a different flavor profile.
