Ingredients

  • 1 cup yellow lentils (toor dal)
  • 3 cups water
  • 1 teaspoon turmeric powder
  • Salt to taste
  • 2 tablespoons ghee or oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 2 dried red chilies
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 tomato, chopped
  • 1 teaspoon garam masala
  • Fresh coriander leaves for garnish

Instructions

  1. Rinse the lentils under cold water until the water runs clear.
  2. Boil the lentils with 3 cups of water, turmeric, and salt in a pot. Simmer for 20-25 minutes until the lentils are soft.
  3. Heat ghee or oil in a pan over medium heat. Add cumin seeds, mustard seeds, and dried red chilies. Sauté until the seeds start to crackle.
  4. Add the chopped onion, garlic, and ginger. Cook until the onion is golden brown.
  5. Stir in the chopped tomato and cook until it softens.
  6. Mix in the garam masala and cook for another minute.
  7. Combine the cooked lentils with the spice mixture. Stir well and simmer for 5 more minutes.
  8. Garnish with fresh coriander leaves before serving.

Additional Notes

For a vegan version, use oil instead of ghee. You can also add a squeeze of lemon juice for extra tanginess. Serve with rice or naan for a complete meal.
