Ingredients
- 1 cup (120g) whole wheat flour
- 1 cup (240ml) filtered water, at room temperature
- Additional all-purpose flour for feeding
- Additional filtered water for feeding
Instructions
- Prepare a clean glass jar or container with a loose-fitting lid.
- Mix 1 cup of whole wheat flour and 1 cup of filtered water in the jar. Stir until no dry flour remains.
- Cover the jar loosely and let it sit at room temperature for 24 hours.
- Feed the starter daily: Discard half of the starter and add 1/2 cup of all-purpose flour and 1/2 cup of filtered water. Stir well.
- Repeat the feeding process for 5-7 days until the starter is bubbly and has a pleasant, tangy aroma.
- Store the mature starter in the refrigerator, feeding it weekly to maintain its activity.
Additional Notes
For a more robust flavor, use rye flour instead of whole wheat flour. If your starter develops a layer of liquid on top, simply stir it back in before feeding. Always use non-chlorinated water to avoid inhibiting the yeast growth.
