Preparation and Cooking Time

Preparation Time: 10 minutes per day

Total Time: 5-7 days

Ingredients

  • 1 cup (120g) whole wheat flour
  • 1 cup (240ml) filtered water, at room temperature
  • Additional all-purpose flour for feeding
  • Additional filtered water for feeding

Instructions

  1. Prepare a clean glass jar or container with a loose-fitting lid.
  2. Mix 1 cup of whole wheat flour and 1 cup of filtered water in the jar. Stir until no dry flour remains.
  3. Cover the jar loosely and let it sit at room temperature for 24 hours.
  4. Feed the starter daily: Discard half of the starter and add 1/2 cup of all-purpose flour and 1/2 cup of filtered water. Stir well.
  5. Repeat the feeding process for 5-7 days until the starter is bubbly and has a pleasant, tangy aroma.
  6. Store the mature starter in the refrigerator, feeding it weekly to maintain its activity.

Additional Notes

For a more robust flavor, use rye flour instead of whole wheat flour. If your starter develops a layer of liquid on top, simply stir it back in before feeding. Always use non-chlorinated water to avoid inhibiting the yeast growth.
