Ingredients

  • 1 1/2 cups warm water (110°F/45°C)
  • 1 packet (2 1/4 teaspoons) active dry yeast
  • 1 teaspoon salt
  • 1 tablespoon granulated sugar
  • 4 cups all-purpose flour
  • 2/3 cup baking soda
  • 10 cups water
  • 1 egg yolk beaten with 1 tablespoon water
  • Coarse sea salt, for sprinkling

Instructions

  1. Prepare the yeast mixture by combining warm water, yeast, salt, and sugar in a large bowl. Let it sit for about 5 minutes until it becomes frothy.
  2. Add the flour gradually to the yeast mixture, stirring until a dough forms. Knead the dough on a floured surface for about 5 minutes until smooth and elastic.
  3. Shape the dough into a ball and place it in a lightly oiled bowl. Cover with a clean towel and let it rise in a warm place for about 1 hour, or until doubled in size.
  4. Preheat your oven to 450°F (230°C). Line two baking sheets with parchment paper.
  5. Boil the water and baking soda in a large pot. Meanwhile, divide the dough into 8 equal pieces.
  6. Roll each piece into a 24-inch rope. Form each rope into a U-shape, then cross the ends over each other and press onto the bottom of the U to form a pretzel shape.
  7. Dip each pretzel into the boiling baking soda solution for about 30 seconds. Remove with a slotted spoon and place on the prepared baking sheets.
  8. Brush each pretzel with the egg yolk mixture and sprinkle with coarse sea salt.
  9. Bake in the preheated oven for 12-15 minutes, or until golden brown. Allow to cool on a wire rack for 10 minutes before serving.

Additional Notes

For a sweeter variation, sprinkle cinnamon sugar on the pretzels after brushing with the egg yolk mixture. You can also serve these pretzels with mustard or cheese dip for added flavor.
