Ingredients
- 12 lasagne sheets
- 2 cups cooked lentils
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 2 tablespoons tomato paste
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 1 cup raw cashews, soaked for 2 hours
- 1/4 cup nutritional yeast
- 1 tablespoon lemon juice
- 1/2 cup water
- 2 cups fresh spinach
Instructions
- Preheat your oven to 375°F (190°C).
- Cook the lasagne sheets according to package instructions. Drain and set aside.
- Sauté the onion and garlic in a large pan over medium heat until translucent.
- Add the cooked lentils, crushed tomatoes, tomato paste, oregano, basil, salt, and pepper. Simmer for 10 minutes.
- Blend the soaked cashews, nutritional yeast, lemon juice, and water in a blender until smooth to make the cashew cheese.
- Layer the lasagne in a baking dish: start with a layer of lentil bolognese, then lasagne sheets, followed by cashew cheese and spinach. Repeat until all ingredients are used, finishing with a layer of cashew cheese.
- Bake in the preheated oven for 30-35 minutes, until the top is golden and bubbly.
- Let the lasagne cool for 10 minutes before serving.
Additional Notes
For a gluten-free version, use gluten-free lasagne sheets. You can also add other vegetables like zucchini or mushrooms for extra flavor and nutrition.
