Ingredients
- 1 pre-made vegan pie crust
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 cup mushrooms, sliced
- 1 cup spinach, chopped
- 14 oz firm tofu, drained
- 1/4 cup nutritional yeast
- 1 tablespoon lemon juice
- 1 teaspoon turmeric
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon smoked paprika
Instructions
- Preheat your oven to 375°F (190°C).
- Prepare the pie crust by placing it in a 9-inch pie dish. Set aside.
- Heat olive oil in a skillet over medium heat. Add the onion and garlic, sautéing until the onion is translucent.
- Add the red bell pepper and mushrooms to the skillet. Cook until the vegetables are soft, about 5 minutes.
- Stir in the spinach and cook until wilted. Remove from heat.
- Blend the tofu, nutritional yeast, lemon juice, turmeric, salt, black pepper, and smoked paprika in a food processor until smooth.
- Combine the tofu mixture with the sautéed vegetables in a large bowl. Mix well.
- Pour the mixture into the prepared pie crust, spreading it evenly.
- Bake in the preheated oven for 35-40 minutes, or until the top is golden and firm.
- Let the quiche cool for a few minutes before slicing and serving.
Additional Notes
Feel free to substitute the vegetables with your favorites, such as zucchini or broccoli. For a gluten-free version, use a gluten-free pie crust. This quiche can be served warm or at room temperature.
