Ingredients

  • 1 pre-made vegan pie crust
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup mushrooms, sliced
  • 1 cup spinach, chopped
  • 14 oz firm tofu, drained
  • 1/4 cup nutritional yeast
  • 1 tablespoon lemon juice
  • 1 teaspoon turmeric
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the pie crust by placing it in a 9-inch pie dish. Set aside.
  3. Heat olive oil in a skillet over medium heat. Add the onion and garlic, sautéing until the onion is translucent.
  4. Add the red bell pepper and mushrooms to the skillet. Cook until the vegetables are soft, about 5 minutes.
  5. Stir in the spinach and cook until wilted. Remove from heat.
  6. Blend the tofu, nutritional yeast, lemon juice, turmeric, salt, black pepper, and smoked paprika in a food processor until smooth.
  7. Combine the tofu mixture with the sautéed vegetables in a large bowl. Mix well.
  8. Pour the mixture into the prepared pie crust, spreading it evenly.
  9. Bake in the preheated oven for 35-40 minutes, or until the top is golden and firm.
  10. Let the quiche cool for a few minutes before slicing and serving.

Additional Notes

Feel free to substitute the vegetables with your favorites, such as zucchini or broccoli. For a gluten-free version, use a gluten-free pie crust. This quiche can be served warm or at room temperature.
