Ingredients
- 1 tablespoon olive oil
- 6 vegan sausages
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 red bell pepper, chopped
- 1 zucchini, sliced
- 1 can (400g) chopped tomatoes
- 1 can (400g) cannellini beans, drained and rinsed
- 1 teaspoon dried oregano
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 180°C (350°F).
- Heat the olive oil in a large ovenproof skillet over medium heat.
- Add the vegan sausages and cook until browned on all sides. Remove and set aside.
- Sauté the onion and garlic in the same skillet until the onion is translucent.
- Add the red bell pepper and zucchini, and cook for another 5 minutes.
- Stir in the chopped tomatoes, cannellini beans, oregano, smoked paprika, salt, and pepper.
- Return the sausages to the skillet, nestling them into the sauce.
- Transfer the skillet to the preheated oven and bake for 30 minutes.
- Garnish with fresh parsley before serving.
Additional Notes
Feel free to substitute the cannellini beans with any other beans you have on hand, such as kidney beans or chickpeas. For a spicier kick, add a pinch of chili flakes.
