Ingredients

  • 12 spring roll wrappers
  • 1 cup shredded cabbage
  • 1 cup grated carrots
  • 1/2 cup sliced bell peppers (red, yellow, or green)
  • 1/4 cup chopped green onions
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon vegetable oil, plus more for frying
  • 1/2 cup sweet chilli sauce, for serving

Instructions

  1. Prepare the filling by heating 1 tablespoon of vegetable oil in a large pan over medium heat. Add the garlic and sauté for 1 minute until fragrant.
  2. Add the cabbage, carrots, bell peppers, and green onions to the pan. Stir-fry for 3-4 minutes until the vegetables are slightly softened.
  3. Stir in the soy sauce and cook for another 2 minutes. Remove from heat and let the mixture cool slightly.
  4. Place a spring roll wrapper on a clean surface, with one corner pointing towards you. Spoon about 2 tablespoons of the vegetable mixture onto the lower third of the wrapper.
  5. Fold the bottom corner over the filling, then fold in the sides. Roll up tightly, sealing the top corner with a dab of water. Repeat with remaining wrappers and filling.
  6. Heat enough vegetable oil in a deep pan to cover the spring rolls. Once hot, fry the spring rolls in batches for 3-4 minutes each, until golden brown and crispy.
  7. Drain the spring rolls on paper towels to remove excess oil.
  8. Serve the spring rolls warm with sweet chilli sauce on the side for dipping.
