Ingredients
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 zucchini, diced
- 1 red bell pepper, diced
- 1 cup mushrooms, chopped
- 1 can (14 oz) crushed tomatoes
- 1 tablespoon tomato paste
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 1/4 cup fresh parsley, chopped
- 12 oz spaghetti or pasta of choice
Instructions
- Prepare the vegetables by chopping the onion, garlic, carrot, zucchini, red bell pepper, and mushrooms.
- Heat the olive oil in a large pan over medium heat. Add the onion and garlic, and sauté until the onion is translucent.
- Add the carrot, zucchini, red bell pepper, and mushrooms to the pan. Cook for about 5-7 minutes, stirring occasionally, until the vegetables are softened.
- Stir in the crushed tomatoes, tomato paste, oregano, basil, salt, and pepper. Bring the mixture to a simmer.
- Reduce the heat to low and let the sauce simmer for about 15 minutes, allowing the flavors to meld together.
- Cook the pasta according to package instructions. Drain and set aside.
- Mix the cooked pasta with the vegetable bolognese sauce. Stir in the fresh parsley.
- Serve hot, garnished with additional parsley if desired.
Additional Notes
For a protein boost, add cooked lentils or chickpeas to the sauce. You can also use gluten-free pasta to make this dish gluten-free. Adjust the seasoning to your taste, and feel free to add a pinch of red pepper flakes for some heat.
