Ingredients
- 2 cups rolled oats
- 1 cup almonds, roughly chopped
- 1 cup dried cranberries
- 1/2 cup honey
- 1/4 cup unsalted butter
- 1/4 cup brown sugar
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C). Line an 8×8 inch baking dish with parchment paper.
- Combine the oats, chopped almonds, and dried cranberries in a large mixing bowl. Set aside.
- Melt the butter in a small saucepan over medium heat. Add the honey and brown sugar, stirring until the sugar is dissolved. Remove from heat and stir in the vanilla extract and salt.
- Pour the melted mixture over the oat mixture. Stir well to ensure all ingredients are evenly coated.
- Transfer the mixture into the prepared baking dish. Press down firmly with a spatula to compact the mixture.
- Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown.
- Cool the bars in the baking dish for about 1 hour before cutting into squares or rectangles.
Additional Notes
For a vegan version, substitute honey with maple syrup and butter with coconut oil. You can also add a handful of chocolate chips for a sweeter treat.
