- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 2 tablespoons of fresh rosemary, chopped (optional)
Instructions
- Preheat your oven to 425°F (220°C).
- Peel the potatoes and cut them into evenly sized chunks, about 2 inches each.
- Boil a large pot of salted water and add the potatoes. Parboil them for about 10 minutes until they are just tender.
- Drain the potatoes and let them sit in the colander for a few minutes to dry out.
- Shake the colander gently to roughen up the edges of the potatoes. This will help them become extra crispy.
- Heat the oil or goose fat in a large roasting pan in the oven for about 5 minutes until very hot.
