- 1 swede, peeled and diced

- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- 1 can (400g) chopped tomatoes
- Salt to taste

Instructions
- Prepare the vegetables by cutting the cauliflower into florets and dicing the swede and turnip.
- Heat the vegetable oil in a large pan over medium heat. Add the cumin seeds and let them sizzle for a few seconds.
- Add the chopped onion and sauté until golden brown.
- Stir in the garlic and ginger, cooking for another minute until fragrant.
- Add the turmeric, coriander powder, and garam masala, stirring well to coat the onions.
- Pour in the chopped tomatoes and cook for 5 minutes, allowing the sauce to thicken slightly.
- Add the cauliflower, swede, and turnip to the pan. Stir to combine with the sauce.
- Season with salt to taste, then cover and simmer for 20 minutes, or until the vegetables are tender.
- Garnish with fresh coriander leaves before serving.
Additional Notes
