Ingredients
- 4 large baking potatoes
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 zucchini, diced
- 1 can (400g) chopped tomatoes
- 1 can (400g) kidney beans, drained and rinsed
- 1 tablespoon chilli powder
- 1 teaspoon ground cumin
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
- Grated cheese (optional, for serving)
Instructions
- Preheat your oven to 200°C (400°F).
- Prepare the potatoes by pricking them with a fork. Place them on a baking tray and bake for 40 minutes or until tender.
- Heat the olive oil in a large pan over medium heat. Add the onion and garlic, and sauté until the onion is translucent.
- Add the red bell pepper and zucchini to the pan. Cook for about 5 minutes until they start to soften.
- Stir in the chopped tomatoes, kidney beans, chilli powder, and cumin. Season with salt and pepper.
- Simmer the mixture for 15 minutes, stirring occasionally, until the vegetables are cooked through and the flavors meld together.
- Remove the potatoes from the oven. Cut a cross on the top of each potato and gently squeeze to open.
- Spoon the vegetable chilli over the opened potatoes.
- Garnish with fresh cilantro and grated cheese, if desired. Serve hot.
Additional Notes
For a spicier chilli, add a chopped jalapeño or increase the amount of chilli powder. You can also substitute the kidney beans with black beans or chickpeas for variety.
