Ingredients
- 1 cup (90g) rolled oats
- 1 cup (125g) all-purpose flour
- 1/2 cup (100g) brown sugar
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup (120ml) coconut oil, melted
- 2 tablespoons maple syrup
- 1 teaspoon vanilla extract
- 150g vegan dark chocolate, chopped
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mix the rolled oats, flour, brown sugar, baking soda, and salt in a large bowl.
- Combine the melted coconut oil, maple syrup, and vanilla extract in a separate bowl.
- Pour the wet ingredients into the dry ingredients and stir until well combined.
- Shape the mixture into small balls (about 1 tablespoon each) and place them on the prepared baking sheet. Flatten each ball slightly with your hand.
- Bake for 12-15 minutes or until the edges are golden brown. Allow the biscuits to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
- Melt the vegan dark chocolate in a microwave or over a double boiler until smooth.
- Dip each cooled biscuit halfway into the melted chocolate and place them back on the wire rack to set.
- Allow the chocolate to harden completely before serving.
Additional Notes
For a nutty twist, add 1/4 cup of chopped nuts to the dough. You can also substitute maple syrup with agave syrup if preferred. Store biscuits in an airtight container for up to a week.
