  • 1 cup (125g) all-purpose flour
  • 1/2 cup (100g) brown sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup (120ml) coconut oil, melted
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 150g vegan dark chocolate, chopped

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix the rolled oats, flour, brown sugar, baking soda, and salt in a large bowl.
  3. Combine the melted coconut oil, maple syrup, and vanilla extract in a separate bowl.
  4. Pour the wet ingredients into the dry ingredients and stir until well combined.
  5. Shape the mixture into small balls (about 1 tablespoon each) and place them on the prepared baking sheet. Flatten each ball slightly with your hand.
  6. Bake for 12-15 minutes or until the edges are golden brown. Allow the biscuits to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  7. Melt the vegan dark chocolate in a microwave or over a double boiler until smooth.
  8. Dip each cooled biscuit halfway into the melted chocolate and place them back on the wire rack to set.
