Ingredients
- 1 cup quinoa, rinsed
- 2 cups water
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1 red bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup olive oil
- Juice of 1 lemon
- Salt and pepper to taste
- 1/4 cup crumbled feta cheese (optional)
Instructions
- Cook the quinoa: In a medium saucepan, combine the quinoa and water. Bring to a boil, then reduce the heat to low, cover, and simmer for about 10 minutes or until the quinoa is cooked and the water is absorbed. Fluff with a fork and set aside to cool.
