  • 1/2 teaspoon turmeric powder

  • 2 cups fresh spinach, washed and chopped

Instructions

  1. Rinse the lentils under cold water until the water runs clear. Set aside.
  2. Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic, cumin, coriander, turmeric, and chili powder. Stir for 1 minute until fragrant.
  4. Add the chopped tomatoes and cook for another 3 minutes, stirring occasionally.
  5. Pour in the rinsed lentils and water. Bring to a boil, then reduce the heat to low and let it simmer for 20 minutes, or until the lentils are tender.

Additional Notes
