Dishoom’s Green Vada (Coriander and Mint) Chutney

Ingredients
- 1 cup fresh coriander leaves, tightly packed
- 1/2 cup fresh mint leaves, tightly packed
- 2 green chilies, chopped
- 1-inch piece of ginger, peeled and chopped
- 1 tablespoon lemon juice
- 1 teaspoon sugar
- Salt to taste
- 2-3 tablespoons water, as needed
Instructions
- Prepare the herbs by washing the coriander and mint leaves thoroughly under running water. Pat them dry with a clean kitchen towel.
- Combine the coriander leaves, mint leaves, green chilies, ginger, lemon juice, sugar, and salt in a blender or food processor.
- Blend the ingredients, adding water gradually, until you achieve a smooth and thick consistency. Scrape down the sides as needed.
- Taste and adjust the seasoning, adding more salt or lemon juice if necessary.
- Transfer the chutney to a serving bowl and serve immediately or store in an airtight container in the refrigerator for up to 3 days.
Additional Notes
For a milder chutney, reduce the number of green chilies. You can also add a tablespoon of yogurt for a creamier texture. This chutney pairs well with a variety of Indian snacks and can also be used as a spread for sandwiches.
