Ingredients

  • 2 pieces of pita bread
  • 2 tablespoons olive oil
  • 1 teaspoon sumac
  • 1 large cucumber, diced
  • 2 large tomatoes, diced
  • 1 red bell pepper, diced
  • 4 radishes, thinly sliced
  • 1 small red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint leaves, chopped
  • Juice of 1 lemon
  • 3 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare the pita bread by cutting it into small squares.
  2. Heat 2 tablespoons of olive oil in a pan over medium heat. Add the pita squares and sprinkle with sumac. Cook until crispy and golden brown, about 5 minutes. Set aside to cool.
  3. Combine the cucumber, tomatoes, red bell pepper, radishes, red onion, parsley, and mint in a large salad bowl.
  4. Whisk together the lemon juice, 3 tablespoons of olive oil, salt, and pepper in a small bowl to make the dressing.
  5. Pour the dressing over the salad and toss gently to combine.
  6. Add the crispy pita pieces to the salad just before serving to maintain their crunch.

Additional Notes

For a gluten-free version, substitute the pita bread with gluten-free flatbread. You can also add grilled chicken or chickpeas for extra protein.
