  • 1/4 cup chopped fresh parsley

Instructions

  1. Prepare the fava beans by draining and rinsing them under cold water.
  2. Heat the olive oil in a medium saucepan over medium heat.
  3. Add the minced garlic to the pan and sauté for about 1 minute until fragrant.
  4. Add the fava beans to the pan, stirring to coat them in the garlic and oil.
  5. Stir in the ground cumin, paprika, salt, and pepper. Cook for 5 minutes, stirring occasionally.
  6. Pour in the lemon juice and continue to cook for another 5 minutes, allowing the flavors to meld.
  7. Remove from heat and mash the beans slightly with a fork or potato masher, leaving some whole for texture.
  8. Garnish with chopped parsley, diced tomatoes, and any optional toppings like onions, hard-boiled eggs, or chili peppers.
  9. Serve warm with pita bread or as a side dish.

Additional Notes

For a spicier version, add a pinch of cayenne pepper or chopped chili peppers. You can also substitute canned fava beans with dried ones; just soak them overnight and cook until tender before using in the recipe.
