- 300g purple sprouting broccoli, trimmed
- 2 tablespoons olive oil
- 3 cloves garlic, thinly sliced
- 1 red chilli, deseeded and finely chopped
- Salt and pepper to taste
- Juice of half a lemon
Instructions
- Prepare the broccoli by washing it thoroughly and trimming any tough ends.
- Blanch the broccoli in a pot of boiling salted water for 2-3 minutes until just tender. Drain and set aside.
- Heat the olive oil in a large frying pan over medium heat.
- Add the garlic and chilli to the pan, sautéing for 1-2 minutes until the garlic is golden and fragrant.
- Add the blanched broccoli to the pan, tossing to coat in the garlic and chilli oil. Cook for another 2-3 minutes.
- Season with salt and pepper to taste, then squeeze over the lemon juice.
- Serve immediately as a delicious side dish.
