- 3 cups tomato juice
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions
- Prepare the vegetables by chopping the tomatoes, cucumber, bell pepper, and onion. Mince the garlic.
- Combine the chopped vegetables and garlic in a large bowl.
- Add the tomato juice, olive oil, and red wine vinegar to the bowl. Stir well to combine.
- Season with salt and pepper to taste.
- Blend the mixture in batches using a blender or food processor until smooth. For a chunkier texture, blend only half of the mixture and mix it back with the unblended portion.
- Chill the gazpacho in the refrigerator for at least 1 hour before serving.
- Serve cold, garnished with fresh basil leaves.
Additional Notes
For a spicier version, add a pinch of cayenne pepper or a few dashes of hot sauce. You can also substitute red wine vinegar with sherry vinegar for a different flavor profile.
