  • 2 tablespoons red wine vinegar
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions

  1. Prepare the vegetables by chopping the tomatoes, cucumber, bell pepper, and onion. Mince the garlic.
  2. Combine the chopped vegetables and garlic in a large bowl.
  3. Add the tomato juice, olive oil, and red wine vinegar to the bowl. Stir well to combine.
  4. Season with salt and pepper to taste.
  5. Blend the mixture in batches using a blender or food processor until smooth. For a chunkier texture, blend only half of the mixture and mix it back with the unblended portion.
  6. Chill the gazpacho in the refrigerator for at least 1 hour before serving.
  7. Serve cold, garnished with fresh basil leaves.

Additional Notes

For a spicier version, add a pinch of cayenne pepper or a few dashes of hot sauce. You can also substitute red wine vinegar with sherry vinegar for a different flavor profile.
