Gennaro Contaldo’s Limoncello is a delightful Italian liqueur that captures the essence of fresh lemons. This homemade version is perfect for sipping after a meal or using in cocktails. The vibrant citrus flavor, combined with a hint of sweetness, makes it a refreshing and special treat.

Ingredients
- 8 large organic lemons
- 1 liter of vodka (preferably 40% alcohol content)
- 500 grams of granulated sugar
- 750 ml of water
Instructions
- Prepare the lemons by washing them thoroughly to remove any wax or pesticides. Pat them dry with a clean towel.
- Peel the lemons using a vegetable peeler, ensuring you only remove the yellow zest and not the white pith, which can be bitter.
- Combine the lemon peels and vodka in a large glass jar with a tight-fitting lid. Seal the jar and store it in a cool, dark place for 7 days, shaking it gently once a day.
- Strain the infused vodka through a fine-mesh sieve or cheesecloth into a large bowl, discarding the lemon peels.
- Heat the water and sugar in a saucepan over medium heat, stirring until the sugar has completely dissolved. Allow the syrup to cool to room temperature.
- Mix the cooled sugar syrup with the lemon-infused vodka, stirring well to combine.
- Bottle the limoncello in clean, sterilized bottles and seal tightly. Store in the freezer for at least 4 hours before serving.
Additional Notes
For a stronger lemon flavor, you can extend the infusion time up to 30 days. If you prefer a less sweet limoncello, reduce the sugar to 400 grams. Serve chilled in small glasses, and enjoy as a digestif or in cocktails.
