- 1 cup red lentils, rinsed
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1-inch piece of ginger, grated
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/2 teaspoon chili powder
- 1 can (14 oz) coconut milk
- 2 cups vegetable broth
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
- Lime wedges (for serving)
Instructions
- Prepare the lentils by rinsing them under cold water until the water runs clear. Set aside.
- Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the garlic and ginger to the pot and cook for another 2 minutes until fragrant.
- Stir in the cumin, coriander, turmeric, and chili powder. Cook for 1 minute to toast the spices.
- Add the rinsed lentils, coconut milk, and vegetable broth to the pot. Stir well to combine.
- Bring the mixture to a boil, then reduce the heat to low and simmer for 20-25 minutes, or until the lentils are tender and the dhal has thickened.
- Season with salt and pepper to taste.
- Garnish with fresh cilantro and serve with lime wedges on the side.
Additional Notes
For a spicier version, add more chili powder or a chopped fresh chili. You can also substitute the red lentils with yellow lentils or split peas for a different texture.
