Ingredients
- 2 pounds green tomatoes, chopped
- 1 large onion, finely chopped
- 1 cup apple cider vinegar
- 1 cup brown sugar
- 1 tablespoon grated fresh ginger
- 2 cloves garlic, minced
- 1 teaspoon mustard seeds
- 1 teaspoon ground cumin
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/4 teaspoon red pepper flakes (optional for heat)
Instructions
- Prepare the ingredients by chopping the green tomatoes and onion, and mincing the garlic.
- Combine the chopped tomatoes, onion, apple cider vinegar, and brown sugar in a large pot.
- Add the grated ginger, minced garlic, mustard seeds, ground cumin, ground cinnamon, salt, and red pepper flakes to the pot.
- Bring the mixture to a boil over medium-high heat, stirring occasionally.
- Reduce the heat to low and let it simmer uncovered for about 1 hour, stirring occasionally, until the chutney thickens.
- Cool the chutney slightly before transferring it to sterilized jars for storage.
- Store in the refrigerator for up to 3 months.
Additional Notes
For a sweeter chutney, increase the brown sugar to 1 1/2 cups. You can also add a chopped apple for extra sweetness and texture. If you prefer a spicier chutney, increase the red pepper flakes or add a chopped chili pepper.
