Ingredients
- 8 large green chilies (mild variety)
- 2 cups boiled and mashed potatoes
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon garam masala
- Salt to taste
- 2 tablespoons oil (for stuffing)
- 1 cup gram flour (besan)
- 1/2 teaspoon baking soda
- Water, as needed
- Oil for deep frying
Instructions
- Prepare the chilies by making a slit lengthwise and removing the seeds carefully. Set aside.
- Heat 2 tablespoons of oil in a pan. Add cumin seeds and mustard seeds. Let them splutter.
- Add turmeric powder, red chili powder, garam masala, and salt. Stir well.
- Mix in the boiled and mashed potatoes. Cook for 2-3 minutes until the spices are well incorporated. Remove from heat and let it cool slightly.
- Stuff each chili with the prepared potato mixture. Ensure they are filled generously.
- In a bowl, combine gram flour, baking soda, and a pinch of salt. Add water gradually to make a thick, smooth batter.
- Heat oil in a deep frying pan over medium heat.
- Dip each stuffed chili into the batter, ensuring it is fully coated.
- Fry the coated chilies in hot oil until they are golden brown and crispy. Remove and drain on paper towels.
- Serve hot with mint chutney or tamarind sauce.
Additional Notes
For a milder version, use less red chili powder in the stuffing. You can also add grated cheese to the potato mixture for a cheesy twist. Ensure the oil is hot enough before frying to prevent the fritters from absorbing excess oil.
