- 1 Knorr vegetable stock cube
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and garlic, sautéing until the onion is translucent, about 5 minutes.
- Stir in the diced butternut squash and cook for another 5 minutes.
- Add the lentils, vegetable broth, and Knorr vegetable stock cube. Stir to combine.
- Season with ground cumin, smoked paprika, salt, and pepper.
