Ingredients
- 2 large aubergines, sliced into 1-inch thick rounds
- 2 tablespoons miso paste
- 2 tablespoons maple syrup
- 1 tablespoon soy sauce
- 1 tablespoon olive oil
- 4 burger buns
- 1 cup arugula or mixed greens
- 1 tomato, sliced
- Salt and pepper, to taste
Instructions
- Preheat your oven to 200°C (400°F).
- Mix the miso paste, maple syrup, soy sauce, and olive oil in a small bowl until well combined.
- Brush the miso-maple mixture generously over both sides of the aubergine slices.
- Place the aubergine slices on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 20-25 minutes, flipping halfway through, until the aubergine is tender and caramelized.
- Toast the burger buns lightly in the oven for the last 5 minutes of the aubergine cooking time.
- Assemble the burgers by placing a slice of aubergine on the bottom half of each bun, followed by arugula, tomato slices, and the top half of the bun.
- Season with salt and pepper to taste before serving.
