Ingredients
- 4 cups fresh cranberries
- 2 cups apple juice
- 1 cup water
- 2 cups granulated sugar
- 1 cinnamon stick
- 4 whole cloves
- 1 tablespoon lemon juice
- 1 packet (1.75 oz) fruit pectin
Instructions
- Prepare the cranberries by rinsing them under cold water and discarding any that are soft or damaged.
- Combine the cranberries, apple juice, and water in a large saucepan. Add the cinnamon stick and cloves.
- Bring the mixture to a boil over medium-high heat. Reduce the heat and simmer for about 20 minutes, or until the cranberries have burst and softened.
- Strain the mixture through a fine-mesh sieve into a large bowl, pressing the solids to extract as much liquid as possible. Discard the solids.
- Return the strained liquid to the saucepan. Stir in the sugar and lemon juice, and bring to a boil over high heat.
- Add the fruit pectin, stirring constantly. Boil for 1 minute, then remove from heat.
- Pour the hot jelly into sterilized jars, leaving 1/4 inch of headspace. Seal with lids and let cool at room temperature for 2 hours.
- Store in the refrigerator for up to 3 weeks or process in a water bath canner for longer storage.
Additional Notes
For a spicier jelly, add a pinch of ground nutmeg or allspice. If you prefer a smoother texture, use a jelly bag instead of a sieve to strain the mixture. This jelly pairs wonderfully with soft cheeses like brie or camembert.
