  • 1 packet (1.75 oz) fruit pectin

Instructions

  1. Prepare the cranberries by rinsing them under cold water and discarding any that are soft or damaged.
  2. Combine the cranberries, apple juice, and water in a large saucepan. Add the cinnamon stick and cloves.
  3. Bring the mixture to a boil over medium-high heat. Reduce the heat and simmer for about 20 minutes, or until the cranberries have burst and softened.
  4. Strain the mixture through a fine-mesh sieve into a large bowl, pressing the solids to extract as much liquid as possible. Discard the solids.
  5. Return the strained liquid to the saucepan. Stir in the sugar and lemon juice, and bring to a boil over high heat.
  6. Add the fruit pectin, stirring constantly. Boil for 1 minute, then remove from heat.
  7. Pour the hot jelly into sterilized jars, leaving 1/4 inch of headspace. Seal with lids and let cool at room temperature for 2 hours.
  8. Store in the refrigerator for up to 3 weeks or process in a water bath canner for longer storage.

Additional Notes
