Ingredients
- 1 lb (450g) portobello mushrooms, cleaned and finely chopped
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg, beaten
- 1 tablespoon soy sauce
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 4 burger buns
- Lettuce, tomato slices, and condiments of choice for serving
Instructions
- Prepare the mushrooms by cleaning and finely chopping them. Set aside.
- Sauté the onion and garlic in olive oil over medium heat until soft, about 3 minutes.
- Add the chopped mushrooms to the pan and cook until they release their moisture and become tender, about 5-7 minutes.
- Transfer the mushroom mixture to a large bowl. Let it cool slightly.
- Mix in the breadcrumbs, Parmesan cheese, beaten egg, soy sauce, thyme, salt, and pepper. Combine well.
- Form the mixture into 4 equal-sized patties.
- Cook the patties in a non-stick skillet over medium heat for about 4-5 minutes on each side, or until golden brown and cooked through.
- Assemble the burgers by placing each patty on a bun and adding lettuce, tomato slices, and your choice of condiments.
Additional Notes
For a vegan version, replace the egg with a flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoons water) and omit the Parmesan cheese. You can also add your favorite spices or herbs to the mixture for extra flavor.
