- 1 cup maftoul (Palestinian couscous)

- 1 cup cherry tomatoes, halved
- 1 cucumber, diced

- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- Juice of 1 lemon
- Salt and pepper to taste
- Optional: 1/4 cup feta cheese, crumbled
Instructions
- Prepare the maftoul by bringing the water or vegetable broth to a boil in a medium saucepan. Add the maftoul and olive oil, then reduce the heat to low. Cover and simmer for about 15 minutes, or until the maftoul is tender and the liquid is absorbed.
- Fluff the cooked maftoul with a fork and let it cool slightly.
- Combine the cherry tomatoes, cucumber, red onion, parsley, and mint in a large bowl.
- Add the cooled maftoul to the vegetable mixture and toss gently to combine.
- Drizzle the lemon juice over the salad and season with salt and pepper to taste. Toss again to ensure everything is well mixed.
- Serve immediately, garnished with crumbled feta cheese if desired.
Additional Notes
For a vegan version, simply omit the feta cheese. You can also add other vegetables like bell peppers or olives for extra flavor. If maftoul is unavailable, substitute with pearl couscous or bulgur wheat.
