Ingredients
- 30-40 ready-made puris
- 2 large potatoes, boiled and mashed
- 1/2 cup boiled chickpeas
- 1/2 teaspoon chaat masala
- Salt to taste
- 1/4 cup tamarind chutney
- 1/2 cup mint leaves
- 1/2 cup coriander leaves
- 2 green chilies
- 1-inch piece of ginger
- 1 teaspoon roasted cumin powder
- 1 tablespoon lemon juice
- 4 cups cold water
- 1/2 teaspoon black salt
Instructions
- Prepare the filling by mixing the mashed potatoes, boiled chickpeas, chaat masala, and salt in a bowl. Set aside.
- Blend the mint leaves, coriander leaves, green chilies, ginger, roasted cumin powder, lemon juice, and a little water to make a smooth paste.
- Mix the paste with 4 cups of cold water, adding black salt to taste. Adjust seasoning as needed.
- Assemble the pani puri by gently cracking the top of each puri to create an opening.
- Fill each puri with a spoonful of the potato-chickpea mixture.
- Add a small amount of tamarind chutney to each puri for sweetness.
- Serve immediately with the prepared mint-coriander water on the side for dipping.
Additional Notes
For a variation, you can add boiled moong sprouts or finely chopped onions to the filling. Adjust the spice level of the mint-coriander water by varying the number of green chilies. If you prefer a sweeter taste, increase the amount of tamarind chutney.
